Make-Ahead Gut-Healthy Salad: Easy Recipe for a Week of Delicious Meals
One of the biggest keys to glowing up is eating a balanced, nutritious, and probiotic diet for your gut health. Salad Ingredients:
1 English cucumber, diced
4 Persian cucumbers, diced
1 container cherry tomatoes, halved
Fresh basil, chopped
1 can chickpeas, drained and rinsed
Salt and pepper to taste
Dressing Ingredients:
3 parts avocado oil
3 parts red wine vinegar
1 part balsamic glaze
Instructions:
In a large bowl, combine the diced cucumbers, halved cherry tomatoes, mozzarella pearls, pomegranate seeds, chopped basil, and chickpeas.
Season with salt and pepper to taste.
In a separate small bowl, whisk together the avocado oil, red wine vinegar, and balsamic glaze.
Pour the dressing over the salad and toss to coat evenly.
Transfer the salad to an airtight container and store it in the refrigerator.
